One of these days when you hear a voice say come.
Where you gonna run to?
First off, I made a good soup tonight. Really good. Taste, texture, color. Everything. The kid lapped it up.
1 big yellow onion chopped.
3-4 stalks of celery rinsed and chopped.
3-4 carrots peeled and chopped.
2 smallish turnips peeled and chopped.
2 japanese (white fleshed) sweet potatoes peeled and chopped.
Heat up a big soup pot -- not bragging (well maybe a little) used my trusty 40+ year old orange Le Creuset stock pot.
When it's hot, coat the bottom of the pot with 4 or 5 generous glugs of grapeseed oil and add the onions. A pinch or two of sea salt. Sauté the onions until they soften up and begin to become translucent. 10 minutes max.
Add the carrots and celery. Continue to sauté for a few more minutes. Add the sweet potatoes and the turnips. Give it a few more minutes.
While that's going. Heat up 6 cups of good chicken broth, homemade if you got it or good store bought if ya don't. I used store bought.
When the broth is steaming add it to the sautéed veg and let it simmer for as long as it takes you to wash and dry your cutting board, knife and whatever else you soiled to bring things along this far. Go wrestle with your kid in the living room for 20 minutes or more.
Pour it into a blender and puree it to a satisfying pulpy consistency and serve it up. You may add a little cream or hemp milk to cool it down for the kiddos. I did.
It was great. A keeper. And not too much effort.
